Picnics are one of the major joys of summer! On a sunny day, nothing beats visiting a grassy park with yummy food and your kids in tow. As a Mom to two toddlers, once the weather begins to warm up, we spend every single meal outside (weather permitting of course). The meal is always that much more enjoyable when you don’t have to worry about cleaning up a messy kitchen full of crumbs after. Instead I love spending what would be clean up time watching my kids laugh, play, explore, and run to their hearts content. This week we had a beautiful sunny and 75 degree day. We loaded up our Radio Flyer wagon and headed out.
Instead of a using a traditional picnic basket we packed up everything in vintage soda pop crates found antiquing years ago.
I made Turkey, Cheese, Lettuce, Tomato & Avocado finger sandwiches for me.
Last Sunday I visited our local farmer’s market and stocked up on fresh organic produce including corn, tomatoes and strawberries. For the kids I made a simple Rice Salad with tomatoes, avocado, & corn and put in Mason Jars. This is our go-to summer salad our whole family loves. Here’s the recipe~
1/4 cup fresh lime juice (4 limes)
3 tablespoons olive oil
1/2 teaspoon salt
2 cups cold cooked brown rice ( I use microwavable rice from Trader Joe’s)
1 cup cooked fresh or thawed frozen corn kernels
2 15-oz. cans black beans, drained and rinsed
1 cup small cherry tomatoes, halved
1 tablespoon chopped fresh cilantro
1. In a small bowl, stir together lime juice, oil, and salt. In a large bowl, stir together rice and corn.
2. Pour lime-juice mixture over rice mixture and stir well to coat. Add beans, tomatoes and avocado, and toss gently to combine.
3. Sprinkle with cilantro and serve.
I like to double this recipe and put in Mason jars. You can either refrigerate the jars or freeze for another day. If you freeze let mason jars thaw about 4 before serving in refrigerator.
For dessert we had homemade whip cream (which is SO easy to make) with our farmers market fresh strawberries. Here’s the recipe~
1 cup heavy cream
2 tbsp. confectioners’ sugar
1 tsp. vanilla extract
Combine heavy cream, confectioners’ sugar, and vanilla extract in a mason jar. Screw the lid on the jar and freeze it for 30 minutes or until cream appears to soften. Shake the jar for 3–4 minutes and refrigerate until serving. Doubling recipe will fill one mason jar.
