Looking for a healthy snack to try in the New Year? My favorite are these
No Bake Peanut Butter Energy Bites. The Twins absolutely LOVE these and eat them as snacks or sometimes as dessert after a meal. I love them and frequently double the recipe and freeze half to have for a later date. It's a win win for all as they don't know they are packed with protein, fiber and omega-three fatty acids. They are super simple to make, don't cost as much as store bought protein/snack bars, and it's nice knowing exactly what's in the bars since my son has a tree nut allergy. If Peanut allergy is a concern for you try substituting Sunflower Seed Butter. Try making them...trust me you'll be addicted too!!
Peanut Butter Energy Bites
Prep Time: 10 minutes
25 servings (or balls)
- 1 Cup Peanut Butter
-
1 Cup Oats
-
1 Cup Honey
-
1 Cup Ground Flaxseed
-
1/3 Cup Chia Seeds

1 Cup Chocolate Chips (I use mini chocolate chips)

1 Handful of Dried Cranberries (if desired)
Directions
- In a bowl add oats, flax seed, chia seeds, chocolate chips, peanut butter, and honey (add handful of dried cranberries if desired). Mix well and put bowl in freezer for one hour. Take out of freezer and roll into 1-2 inch sized balls. Keep them refrigerated until you eat...ENJOY!!
