Nothing beats quintessential Americana summer. Family, BBQ’s, Classic Coca-Cola, Apple Pie (well in our case homemade ice cream sandwiches) a worn white t-shirt, Levi’s and all things Red, White and Blue my friends! Beyond grateful for our freedom, family, friends, and fireworks. We’ll be serving up our favorites including Classic Coca-Cola (nothing beats coke in the bottle), watermelon slushies (for the kids just omit the booze) and homemade ice cream sandwiches for all.
Watermelon/Vodka Slushie
serves 4
1 smaller seedless watermelon
2 limes – juiced
4 shots Tito’s vodka
lemon – cut into rounds (optional)
mint leaves (optional)
Cut watermelon into one-inch cubes and place on a parchment-lined cookie sheet or plate. Let freeze for four or more hours. Place all ingredients in a blender and blend until smooth. Sometimes, you’ll have to turn the blender off and move around the watermelon with a spoon to get everything moving again. Once fully blended, pour into glasses and garnish with lemon round and small mint leaves.
Thank you Caroline’s Kitchen Table for this yummy recipe
Homemade Ice Cream Sandwiches
serves 8
Pillsbury Chocolate Chip Cookies Tube, 16.5 Oz (or any brand you like)
1 Carton Vanilla Ice Cream
Festive Sprinkles
Cut out 16 large cookies from the cookie dough and place on a greased baking sheet. Once baked (crispy is better) let cool on a baking sheet for 20-30 minutes. Spoon out vanilla ice cream onto one side of a cookie. Allow a few minutes for the ice cream to melt and press another cookie on top. Decorate with festive sprinkles. Put each large cookie in a ziploc bag in freezer. Eat within the next 2-3 days when most fresh.
Happy 4th Friends!
